Spinach with bonito flakes (Ohitashi)

Cooking time: 15mins

Ingredients (for 4 persons)
1 bunch fresh spinach
salt
2 tbsp soup stock
2 tbsp soy sauce
4 tbsp dried bonito flakes

 

  1. Wash the spinach.  Add a pinch of salt into boiling water.
  2. Put the spinach in the boiling water from the stem side, and boil it for a few minutes.  Do not overcook the spinach.
  3. Drain the spinach and soak it in the cold water.  Drain the spinach and squeeze it well.
  4. Mix the stock and soy sauce in a dish.
  5. Cut the spinach into 1 1/2 inch lengths and serve it on a plate.
  6. Pour the mixture of the stock and soy sauce, and sprinkle dried bonito flakes over the spinach.
