Ingredients (for 4 persons)
7 oz (200g) beef or pork, thinly sliced
3 large potatoes
1 large onion
2 cups soup stock
2 1/2 tbsp soy sauce
3 tbsp mirin
1 tbsp sugar
- Pare potatoes and cut into 3-4 pieces. Soak them in cold water for 5 minutes.
- Cut thinly sliced meat into 1 1/2-2 inch pieces.
- Cut the onion into wedges.
- Heat the oil in a saucepan, and fry the meat for 1 minute.
- Add the potatoes and onion, and fry for a further 2 minutes.
- Pour in the stock and bring to a boil. Remove scum carefully.
- Cover the pan with foil that is just smaller than the diameter of the pan, and simmer for 3-4 minutes.
- Add the sugar, and cover and simmer for another 4-5 minutes.
- Add the mirin and soy sauce, re-cover the pan and simmer for 6-7 minutes.
- Remove the lid and simmer until only a little soup remains.
