Ingredients (for 4 persons)
11 oz (300g) chicken breast
1 onion
4 eggs
4 tbsp soy sauce
4 tbsp mirin
1 1/2 cups soup stock
4 bowls of steamed rice
- Cut the chicken into bite-size pieces and thinly slice the onion.
- Place the stock, soy sauce and mirin in a saucepan and bring to a boil.
- Add the chicken and onion slices to the pan and simmer for about 5 minutes.
- Beat eggs in a bowl.
- Bring the soup to a boil, then pour the eggs over the mixture in the pan.
- Reduce the heat and put on a lid.
- After 1 minute, turn off the heat.
- Put a quarter of the rice into an individual serving bowl, then place the mixture on to the rice.
