Sauteed Burdock Root (kinpira-gobo)

Cooking time: 20mins

Ingredients (for 4people)
200g Burdock root
50g Carrot
1 Dried red chilli (akatougarashi)
1tbsp Sesame oil
1 1/2 Soy sauce
1 1/2 Mirin
Vegetable oil

 

  1. Peel the burdock root and carrot, cut them into 6cm thin stripes.
  2. Soak them in water for 30mins, and drain them.
  3. Put some vegetable oil ,sesame oil and chilli in the pan. Put it on high heat.
  4. Add burdock root and fry for few minutes.
  5. Add the carrot and fry for 3mins.
  6. Put the rest of all ingredients, 3tbsp of water and stir well for few minutes.
  7. Turn off the heat.
