Japanese non-sweet Pancake:Kansai style (Okonomiyaki)

Cooking time: 45mins

Ingredients (for 2 people)
100g all purpose flour
300g cabbage
6 slices thinly sliced pork   
20g yam potato (yamaimo)  
1tbsp red pickled ginger  
2 spring onions
2 eggs
130cc water          
1tbsp katsuodashi      
2 tbsp mayonnaise      
20g bits of deep-fried butter
some Okonomiyaki Sauce 
some bonito flakes (katsuobushi) 
some seaweed flakes (aonori)

 

  1. Chop the cabbage into 2cm square.
  2. In a bowl, pour water, katsuodashi, eggs, yam potato and mix them together.
  3. Add flour in the bowl, and mix them well.
  4. When every things are mixed, put cabbage, spring onions, bits of deep-fried butter,
    red pickled ginger and mix them quickly around 10 times.
  5. Heat a pan or hot plate to 200℃.
  6. Fry the pork slices, and  pour the butter ontop of them.
  7. Fry Okonomiyaki like a pancake.
  8. Put the rid to steam for 5 mins.
  9. Fry until the surface turn into golden brown colour.
    (approx:5 mins each side)
  10. Spread the Sauce on one side and put some mayonnaise.
  11. Sprinkle the seaweed flakes and bonito flakes.
