[OTHER] Do-It-Yourself Wine

cut.jpgWhether you are a sommelier or just a wine lover, you may have dreamed of making your own wine to your taste, from the type of grapes to the design of the bottles. It would even be a supreme delight if the wine could be on the menu list of fancy restaurants in the city. Forthose who spend their time thinking about this, CrushPad Japan, the San Francisco-born winery, can turn all the daydreams into reality.

As in California, the trend among wine lovers has been shifting towards custom wine making in Japan. CrushPad Japan has offered to help every step of the way, from creation to distribution of your own wine. The company has prepared several steps to follow and the clients first begin their wine making with the planning process: all the details of style, structure, flavors, aftertaste, colors, aromatics, and the ripeness of your wine are defined, and in addition the client's own story for this wine making is also audited.

tree hills.jpg"Many clients tell us their special stories," says Mr. Sugimoto, CEO of CrushPad Japan. "Some people make their wine to celebrate the marriage of their daughters, or their number one sales record at work." According to Mr. Sugimoto, the demographics of their clients varies from young to senior, but there are more male customers than females.

grapes.jpgAfter the plan is complete, one can decide on many details such as which grapes from which vineyards to use among other technical things. CrushPad provides a list of 30 decisions called "the CrushPad 30" to support the wine making process, and the clients embody their plan by answering the questions on the list.

Finally, once the grapes are picked and taken to CrushPad's winery, their professional wine making team takes over from processing to brewing, according to the client's plan. For the clients who actually want to experience the wine making process hands on, there are many exciting experiences waiting such as tasting the on-the-way wine.

bottles.jpgAfter about 10 to 24 months of aging, the wine is ready to be bottled. During this period, the designer helps to create a label and select the corks and bottles. Once bottled, the exclusive wine is ready to be relished at home. However, if the client wants to take it further, CrushPad even supports them in selling their wine at fancy restaurants in Tokyo and Osaka. It can be more than just a bottle of wine, but an experience and a story.

― Tell us about your own wine.
"Actually, my wines have been a good inducer of communication between I and my customer at the restaurants. All my wine has a falcon's wing logo, and the customer's always show their interest in it. Then the story bottled in my own wine begins."

―So what's the best of wine making
"Whether it's told or not, all the self-made wines have their own stories. I think the real crushpad-flag.jpgenjoyment of wine making is in there: the story in the bottle."
